Chicken Quesadillas

servings: 4
serving size: 1/2 quesadilla

Ingredients:  Nutrition Info:
1 boneless skinless chicken breast
2 tbsp EVOO
salt & pepper to taste
3 cups shredded Mexican blend cheese
4 tbsp Quesadilla sauce (see recipe here)
4 large tortilla shells*
carbs: 10g
fiber: 2g
net carbs per serving: 2g

  1. Dice chicken breast into very small pieces.
  2. Saute with olive oil until golden brown
  3. Season with salt & pepper.
  4. Remove from heat and set aside
  5. Smear 2 tbsp of Quesadilla sauce (see recipe here) onto two flatbreads.
  6. Sprinkle with 1 1/2 cups of cheese and half of the cooked chicken.
  7. Using a large frying pan, heat your quesadilla until warm and melty.

*I use Aldi’s Fit & Active Flatbread original tortilla shells. They have 7net carbs per shell and they have a nice soft texture that I really love in flour tortillas.
