Cauliflower “Mashed Potatoes”

Ingredients:  Nutrition Info:
6 cups (1 med head) cauliflower
1 fresh garlic clove
4 tbsp butter
salt & pepper to taste

fiber: 12g
net carbs per serving: 2.9g

  1. Separate cauliflower into florets and cut up into smaller chunks.
  2. In a medium pot, cover the cauliflower and garlic with water.
  3. Cover and bring to a boil.
  4. Reduce heat. Cook for about 10 minutes (or until cauliflower is tender).
  5. Drain
  6. Add butter, salt and pepper
  7. Use an immersion blender (or food processor) to process until smooth.
  8. Serve hot!
