6 cups (1 med head) cauliflower
1 tbsp sesame oil
2 tbsp soy sauce
1 tbsp olive oil

Directions:
- Finely grate the head of cauliflower using a cheese grater.
- Line a bowl with paper towel, then place all the grated cauliflower inside and cover (with plastic wrap or an airtight lid).
- Let the cauliflower sit overnight if possible.
- Add chicken, olive oil and 1 tbsp soy sauce to frying pan. Fry until chicken is no longer pink.
- Set chicken aside.
- Add cauliflower and 1 tbsp soy sauce to frying pan.
- Fry for 10-15 minutes, or until cauliflower is desired tenderness.
- Serve chicken over rice.
