Cauliflower Rice with Chicken

6 cups (1 med head) cauliflower
1 tbsp sesame oil
2 tbsp soy sauce
1 tbsp olive oil
2 boneless, skinless chicken breasts, diced

  1. Finely grate the head of cauliflower using a cheese grater.
  2. Line a bowl with paper towel, then place all the grated cauliflower inside and cover (with plastic wrap or an airtight lid).
  3. Let the cauliflower sit overnight if possible.
  4. Add chicken, olive oil and 1 tbsp soy sauce to frying pan. Fry until chicken is no longer pink.
  5. Set chicken aside.
  6. Add cauliflower and 1 tbsp soy sauce to frying pan.
  7. Fry for 10-15 minutes, or until cauliflower is desired tenderness.
  8. Serve chicken over rice.
